The Delta One changes Delta announced on October 14, 2026 are the biggest refresh of its business class since the doored suites arrived in 2017, and almost none of it is about the seat.

This round is the soft product: a new menu built around comfort-food classics, Blanton’s bourbon, a new wine list, Missoni amenity kits, a second pillow, Bombas socks, and a service flow that finally lets you order your entrée 18 hours out and skip breakfast for a croissant. Delta is calling it the “next era of Delta One” and its largest investment and most holistic redesign in nearly 30 years.

Here is what is actually changing, when it reaches your route, and whether any of it should change how you book.

What Is Changing in Delta One (and When)

Delta is rolling the new experience out in phases. The first flights to get it are transoceanic Delta One departures from Los Angeles this fall, which makes sense given LAX is Delta’s most contested premium market and the airport where it has leaned hardest into premium seats. The full global network follows in early 2027.

Within that LAX phase, reports say Auckland goes first on October 24, Brisbane on October 26, and Sydney, Melbourne, Tokyo, Hong Kong, Shanghai, and Paris follow on November 3. Domestic transcon Delta One out of LAX does not appear to be in the fall phase.

Not everything lands at once even on those flights. The menu and tableware are the fall launch. The Missoni Winter Elsewhere amenity kit, second pillow, and Dassai sake arrive November 3. Blanton’s goes on board December 1. The regional grilled salmon on Haneda flights starts February 2027, the new cocktails and mocktails hit international flights in March 2027 and domestic in April 2027, and the next-generation suites on the A350-1000 are a separate 2027 story.

The New Delta One Menu

The headline is a change in philosophy. Delta’s in-house team worked with Chef Simon Hulstone, who ran a restaurant with a 20-year Michelin star run, and the brief was elevated versions of the dishes passengers already say they love, not tasting-menu theater. Chefs Norio Ueno and Jereme Leung consulted on regional dishes for Asia routes, and Master Sommelier Andrea Robinson shaped the wine list.

The new Delta One wagyu beef burger with caramelized onions, cheddar, and cornichons on a toasted brioche bun is getting most of the attention, and I expect it will be the most-ordered thing on the menu. The rest of the entrée lineup is roasted sea bass with tomato tarragon sauce, braised lamb with red wine demi-glace and lyonnaise potatoes, beef short rib (braised for eight hours, per Fortune’s coverage of the New York reveal) with potato gratin, a seasonally rotating wild mushroom risotto designed to hold its texture at altitude, macaroni and cheddar with garlic breadcrumbs, and a chicken Caesar salad entrée. Mid-flight, a chicken salad croissant, hummus, and crudité are new additions. Flights between the U.S. and Tokyo Haneda get a grilled salmon with ginger soy sauce starting February 2027.

The dessert cart is staying, which was the right call. The classic sundae gets a new signature chocolate sauce, Amarena cherries, pecan praline crumble, and a small doughnut on top. There is a new dairy-free sorbet with an optional Champagne Taittinger float, and a Napa-inspired cheese plate with Cowgirl Creamery Mt. Tam and Hop Along, Cypress Grove Humboldt Fog, and Rustic Bakery crisps.

The service around the food is changing too. A new “sip and settle” moment puts a hot towel, warm nuts, and your drink on the console before the meal so you are not juggling a tray. Fresh cracked pepper comes around during the first course, and sauces now arrive in small saucières so you control how much goes on the plate. Delta says more than 200 flight attendants contributed feedback over 14 months and 36 trial flights, and the result includes more than 60 new pieces of tableware stamped with the Delta widget.

Blanton’s, Dassai, and the New Wine Program

Starting December 1, Delta becomes the first and only airline pouring Blanton’s single-barrel bourbon, the 93-proof bottle with the horse-and-jockey stopper that is hard to find at retail for anywhere near list price. Delta framed it as a heritage pairing, and from a passenger standpoint it is the kind of thing that makes a flight memorable even if you only have one.

The wine program, which Delta previewed earlier this fall, moves from four rotations a year to two for consistency. Delta and Robinson narrowed 1,600 wines down to 13 from 11 wineries for the October 2026 through September 2027 list, including Silver Oak, which retails north of $200 a bottle. Champagne Taittinger, already the international pour, now expands to domestic Delta One as well.

Dassai 45 sake joins all Haneda flights on November 3. It is brewed from Yamada Nishiki rice polished to 45 percent and is a smart pairing with Ueno’s regional dishes. The cocktail program is lighter: alcoholic and non-alcoholic versions of a Hugo Spritz and a Paloma, borrowed from the Delta One Lounge mocktail menu, arriving on international flights in March 2027 and domestic in April 2027.

New Missoni Amenity Kits, Pillows, and Bombas Socks

The Missoni partnership continues with the Winter Elsewhere collection launching November 3. The kit has a nature-inspired print and a wrist strap meant for carrying it after you land. Inside are Grown Alchemist skincare, a Marvis dental kit, and Missoni-branded comfort items.

The sleep upgrade is a second Missoni cuddle pillow on international and domestic Delta One routes, layered on top of the existing mattress pad, memory foam pillow, slippers, and eye mask. Delta’s own research has 97 percent of Delta One customers citing the flat bed as the reason they pick the cabin, so a second pillow is a small change aimed at the thing people care about most.

Bombas socks are back on select domestic and international Delta One flights departing the U.S. They have the honeycomb arch support and a “Fly Delta Jets” stamp, and Delta is calling it a limited-edition drop, so do not count on a pair on every flight.

More Control: 18-Hour Pre-Order and Skip-the-Breakfast

This is the change I think matters most for anyone who flies Delta One regularly. Entrée pre-selection now closes 18 hours before departure instead of 24, which Delta says makes it the only U.S. carrier with a window that close to flight time. If you have ever been locked out of the pre-order page the morning before an evening flight, that extra six hours is the difference.

Pre-select options are also expanding to include gluten-free meals, lighter fare such as protein-added salads, and a pre-arrival choice. On long-haul flights, if you would rather sleep through the second service you can opt out of the full breakfast in advance and get coffee and a croissant before landing instead. That is a genuinely useful option on eastbound redeyes where the breakfast service often starts 90 minutes out.

The Porsche Perk (and Why Most Flyers Won’t Get It)

Delta is expanding its fleet of hybrid Porsches used for tarmac transfers from 40 to 70 vehicles across 15 airports by 2028. But the catch: the Porsche ride is part of VIP Select, Delta’s paid concierge add-on, not something that comes with a Delta One ticket. If you are not buying VIP Select, this change does not affect you. Delta Diamonds occasionally get surprise Porsche transfers on tight connections, but that is operational, not a benefit.

What’s Still Coming: A350-1000 Suites in 2027

The seat itself is not part of this announcement, and that is the caveat on the whole package. The next-generation Delta One suite debuts on Delta’s new Airbus A350-1000s in 2027, with 24-inch 4K screens, Bluetooth audio, and wireless charging per coverage of the New York reveal. Delta also plans to add doored suites to its A330-200 and A330-300 fleet and says 90 percent of Delta One seats will have sliding doors by 2030. The flip side is that the 767s and older A330s with no doors and 10-inch screens will keep flying with the new tableware and bourbon for several more years. Check your aircraft type before you assume the hard product matches the soft product.

How to Book Delta One With Points

Delta SkyMiles prices Delta One dynamically and often expensively, so the better path is usually a partner. Virgin Atlantic Flying Club and Air France-KLM Flying Blue both book Delta One, and both are transfer partners of American Express Membership Rewards, Chase Ultimate Rewards, Capital One, and Bilt. Amex also transfers directly to SkyMiles. Virgin Atlantic moved to dynamic pricing on Delta awards, so the old flat charts are gone, but transfer bonuses to Virgin and Flying Blue come around several times a year and are the moment to move points.

If you are building a balance for one of these flights, the Amex Platinum gives you access to all three programs plus Centurion and Delta Sky Club access when flying Delta, and the Bilt cards earn transferable points on rent with no fee, which I break down in my Bilt Palladium review.
